Caramelised Tomato, Pesto & Feta Cheese Bread
Makes 1 loaf
Use instant or rapid rise yeast, not regular active dry yeast — this dough only gets one machine cycle, and instant yeast is what makes that timing work. The Home Bakery Mini also has no separate rise-only or bake-only function, so — unlike the original recipe — the final rise and bake happen in a regular loaf tin and oven rather than back in the Baking Pan.
Rosemary & Garlic Focaccia

Scaled down to fit the Home Bakery Mini. The original is a 3½ cup flour dough baked in a 9×13 pan — about 40% more than this machine's Dough Setting is built for (the manual never goes above 2½ cups), and that much dough climbs the Baking Pan and labours the motor. The amounts here are the original recipe at five-sevenths, which is why the pan drops to 9×9. Everything else is unchanged. The dough should come out slack and a little sticky; if it looks dry and tight while kneading, add water 1 Tbsp at a time.
